MARRY ME CHICKEN

Description

This is my take on the viral Marry Me Chicken recipe, it is very similar to how I make Tuscan Chicken. I used chicken cutlets here because it is much faster to cook. Feel free to use chicken breasts and adjust the cooking time.

6 chicken cutlets

1 cup all purpose flour

1 tablespoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Sauce:

1/2 cup diced shallot or 1/2 onion, diced

6 garlic cloves, diced

1/3 cup sundried tomatoes, sliced thinly

2 tablespoons oil

2 tablespoons butter

1 cup chicken broth or more

1 teaspoon each: salt, pepper, garlic powder, onion powder, smoked paprika and Italian seasoning

1 cup heavy cream or more

3/4 cup grated parmesan

Parsley for garnish


Instructions

Directions:

  1. Combine the flour and seasoning, dredge each cutlet and shake off excess flour. Set aside.
  2. Into a skillet, melt 1 tablespoon oil and 1 tablespoon butter. Add 3 chicken cutlets and cook for 3 minutes on each side. Remove and melt the other tablespoon of oil and butter. Cook the remainder of the cutlets and set aside.
  3. Into the now empty skillet add the shallot and add a pinch of salt. Cook for 4 minutes. Add the minced garlic and sun dried tomatoes. After a few minutes, add the chicken broth. Cook for a few minutes and scrape the bits from the bottom of your skillet.
  4. Add the heavy cream and parmesan and cook for a few more minutes. Return the chicken into the skillet along with its juice. Spoon the sauce over the chicken and cook for a few minutes.
  5. Serve over pasta and garnish with parsley.
