For the Shrimp
1 lb shrimp, peeled and deveined
1 teaspoon cornstarch
1 teaspoon oil
1 teaspoon Shaoxing wine (or Chinese cooking wine)
1/2 teaspoon salt
Stir Fry Sauce
1/3 cup water
1/4 cup soy sauce
1 tablespoon oyster sauce
1 teaspoon rice vinegar
1 teaspoon sugar
1 teaspoon sesame oil
2 teaspoons cornstarch
1/2 teaspoon dark soy sauce (optional, for color)
For the Stir Fry
1 tablespoon oil
1 head broccoli, cut into florets
1 bell pepper, sliced
1/2 onion, sliced
1 teaspoon grated ginger
2 cloves garlic, minced
2 green onions, sliced
Directions
- Velvet the shrimp. In a bowl combine the shrimp with cornstarch, oil, Shaoxing wine, and salt. Toss well and set aside while preparing the rest of the ingredients. This step also keep the shrimp tender.

- Cook the vegetables. Add a bit more oil to the skillet if needed. Start with the broccoli and add a splash of water. Cover and cook for 3-4 minutes until slightly tender. Add the onion, bell pepper, ginger, and garlic. Stir fry for a few minutes until the vegetables are crisp-tender.
